The Might & Majesty of Mung

When Next Ingredient asked me for an interview to talk about one essential ingredient, guess what I chose?

Other interviewees had already spoken of pomegranate, rose petals, nettle, lion’s mane, lemon, fennel, and so many exalted and gorgeous ingredients.

So what was left for me to do but go the opposite way?

To the stock standard, the every day staple…

To the humble bean.

Here is that interview with just some of the many reasons I believe mung is a mighty friend in the Ayurveda kitchen, and for everyday enlightened health.

You can check out the Next Ingredient Podcast here for all the conversations about the exalted beauty of nature’s fresh ingredients. I love their podcast, and the work they are doing in food education. 🍃

I love mung so much I make a meal with it at least weekly. You will find many recipes with mung here on this blog, including this Mung Bean Miso Noodle Soup, pictured above.

Mung is also a delightfully delicious highlight in my Ayurveda Spring Reset – on now if you would like to join us. It offers 7 daily one hour video classes, plus 50 pages of recipes, meal plans and Ayurvedic tips for vibrant rejuvenation in spring.

So, how do you like your Mung?
Let me count the ways…

Happy Spring!
