Steel Cut Oats Colcannon

On this St. Patrick’s Day I want to share with you a recipe I’ve been enjoying this late winter/early spring.

It’s a play on the Irish dish Colcannon, substituting oats for the traditional potatoes. Surprisingly good, it’s hearty for breakfast, light yet satisfying for lunch. Ayurvedically speaking, oats are Vata balancing, greens, of course, are purifying, sesame seeds are sweet, heating, tonifying. It’s a warm six-taste meal, with emphasis on sweet/bitter.

You can skip the garlic, but do add lemon or orange zest for that touch of sunshine.

Steel Cut Oats Colcannon
Makes 2 servings

Ingredients
1 T ghee
1 small shallot, chopped
1 clove garlic, peeled and minced, optional
1 coin ginger, peeled and minced, optional
1/2-1 t curry spice blend (amount according to taste/need)
1/4 cup quick cook steel cut oats
1 cup vegetable broth
1 bunch leafy greens, ie collards, kale, spinach, chard, chopped
orange zest, pink salt, fresh thyme

Method
In a sauce pan, melt the ghee over medium heat. Add the shallots and sauté until they begin to turn translucent, about 5 minutes. Adjust the heat so you don’t burn, but you do get a consistent heat to, the shallot. Stir in the garlic and/or ginger if adding. Sauté another 2-3 minutes, then sitr in the winter spice blend and sauté one more minute.

Turn up the heat as you stir in the oats and vegetable broth. Bring to a light boil, then add the greens. Gently simmer 5-7 minutes, redcuing heat if necessary to keep the simmer light. Check and stir occasionally. 

Remove from heat. Serve with zest, thyme and salt to taste, and optionally a drizzle of olive oil and/or toasted sesame seeds.
