OATMEAL ALMOND BUTTER CHOCOLATE CHIP BROWNIES
With five primary ingredients, these are quick and easy to make. You can swap almond butter for peanut butter which in either case can be chunky or creamy.
Ingredients
1 cup coconut sugar
1 cup natural almond butter
2 teaspoon pure vanilla extract
1 1/2 cups oat flour
1 1/2 teaspoon baking powder
1/4 teaspoon rock salt
1/2 cup unsweetened almond milk
1/2 cup chocolate chips
Instructions
Preheat the oven to 170 C / 350 F. Line an 8×8-inch square pan with parchment paper.
In a small bowl, mix together coconut sugar, almond butter and vanilla. In larger bowl whisk together oat flour, baking powder, and salt. Stir the almond butter mixture in to the oat flour mixture, then add almond milk and chocolate chips (leave a few for the top).
Transfer the dough into the lined pan and use your fingers to press evenly. Sprinkle remaining chocolate chips on top.
Bake 15-20 minutes, until they begin to brown at the edges. Remove from the oven. Allow to cool ten minutes before cutting into bars and serving.

Oats
Oats are sweet, a little cool, demulcent, emollient and laxative. Good for Vata and Pitta, they increase Kapha. Oats build tissue, especially reproductive tissue, while soothing the nerves and strenghtening the mind.
Almonds
Almonds are sweet, sightly bitter, warm, nutritive, nervine, demulcent, laxative, and good for cough. They increase nerve and reproductive tissue, strengthen kidneys and brain, and are a good tonic for debility and rejuvenation. Specifc to reduce Vata, they increase Pitta and Kapha.

Yum! Dark chocolate and almond butter is a favorite pairing of mine and one I have often as a quick mid-afternoon treat. I make similar bars but they have eggs and don’t have oat flour. Will have to try your version. Appreciate the Ayurveda lens on these ingredients. Hope you’re well Laura!
