Need to snack? Popcorn is light, dry and rough, making it an ideal snack for Kapha, who shouldn’t really snack – Oh what to do?
Every now and then one has the kids over, or you have family movie night, or you had a late lunch and don’t feel like much for dinner… If it is Spring then you are likely to be in Kapha season when the weather is often heavy, wet and cool. This could be a healthy snack for those times when easy, light and family-friendly is the need of the moment.
Brought to you by the inspiring Katie Farina, who teaches plant-based cooking in San Diego, and has just come out with a book full of her gorgeous, extraordinary recipes. You can learn all about her at Katie’s Healing Kitchen, especially the moving story of learning to cook delicious plant-based meals to help her mother heal from cancer. This is her book.
HERBED “WHITE CHEDDAR” POPCORN
Yield: About 6 Cups
Ingredients
Herbed White Cheddar Topping
- 1/3 cup cashews
- 1/4 cup nutritional yeast
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon Herbes de Provence
- 1 tablespoon arrowroot starch
- 1 teaspoon salt
Popcorn
- 1/2 cup corn kernels
- 1/4 cup or more coconut oil, melted
Directions
- Place all topping ingredients into a food processor. Process until powdery, about 1-2 minutes.
- Pop popcorn on the stove or using an air popper.
- Pour melted coconut oil over popcorn then mix in desired amount of the topping. Enjoy!
Chef’s Tip: The herbed white cheddar topping will hold for a month. Feel free to place in an old spice jar or mason jar to keep on hand for when you get a craving for popcorn. It also makes a great DIY gift when packaged in containers.
Laura’s Note: Please only purchase organic popcorn, otherwise it is GMO and very disregulating to digestion. Also please note that popcorn’s qualities of light, dry and rough make it a poor choice for Vata who needs hearty, moist/lubricating and smooth/gentle. Keep in mind your dosha, and the dosha of the time of day and season, for the optimal digestion that leads radiant energy and health. Loving yourself includes letting Mother Nature love you with her healing foods. xo
Even if you aren’t a popcorn lover, the “herbed white cheddar” topping is good on everything, and it makes a great salt substitute.
Do you like popcorn? Or, what’s your favorite snack?

I’d love to try some new recipes- the kids are ooooing and aaaahhhing over the deserts which look incredible. Are most of these vegan recipes ayurvedic too?💛
Leila, They are not presented from an Ayurvedic perspective. We’d have to apply and modify ourselves. But I love it for so many reasons- she gives recipes that everyone can love, and lots of clever ideas I’d never have thought of, and it is all so easy to make. Thank you! xo
It is so great to see two local chefs come together 🙂 Laura, I’ve been following your blog for awhile. I still have your detox dahl as one of my go-to staples!
I’ve also been to several of Katie’s cooking classes. So much fun.
