Easy Oatmeal Chocolate Chip Cookies

No flour. The oats do the job. With the help of almond butter.

No sugar, no dairy, no gluten, no junk either. Just good old-fashioned, whole food ingredients, proving once again that simple is good and nature is great.

Caveat: These cookies taste “healthy” – more like a breakfast cookie, if that’s a thing. They could be sweeter and more dessert-like by doubling the maple syrup.

The chocolate chips I used were vegan and super dark so afforded no extra sweetness. After tasting these cookies straight from the oven, and realizing the chips didn’t kick it, I drizzled maple syrup over the cookies and sprinkled each with a pinch of salt. That sunk in so they stacked and stored well. Still, with no preservative added they only last about 4 days, so eat up! 

In the recipe below I’ve adjusted for that initial economy of sweetness. If you use a semi-sweet or milk chocolate chip, you might consider reducing the amount of maple syrup. You can always add later; you can’t subtract.

Easiest Ever Oatmeal Chocolate Chip Cookies
Makes about 12

Ingredients
1/2 cup oats, soaked
1 tablespoon ground flaxseed
2.5 tablespoons water
1/4 cup almond butter
1 tablespoon ghee or coconut oil
1 tablespoon maple syrup
1/4 teaspoon baking soda
1/4 teaspoon pink salt
pinch cinnamon
pinch cardamom
3-4 handfuls healthy chocolate chips*

Method
Soak the oats for 8 hours or overnight. Make a flax egg: In a small bowl stir the ground flaxseed with water. Let site at least 5 minutes.

Preheat your oven to 375F. Drain the oats. Drain well and don’t rinse.

In a medium size mixing bowl, blend the almond butter, oil and maple syrup. Stir in the “flax egg” and mix well. In a smaller bowl, mix the dry ingredients, then stir in with the almond butter mixture. Add the soaked, drained oats and blend well.

Lay a piece of parchment paper over a baking tray. Spoon the batter into 12 lumps. Bake on middle rack for 20 minutes.

*If you use a very dark chocolate then you may want to add a bit more maple syrup.

  1. Super yummy! I’ll try it this week. I like to use what’s on hand and have everything but the maple syrup and the flaxseed. Since I have organic milk chocolate chips that covers the sweetness.Thoughts re flaxseed? I may use an egg.

    • Same Kate. But I had some soaked oats I needed to use up, so threw these together and they were good. They are healthy enough to be a breakfast or post work-out treat, and my boys love a good cookie now and then. Thanks!

    Do you have suggestion for a replacement for the almond butter? – I am allergic. My 14 year old son has become the cookie maker at our home recently, and I think these will be the perfect twist to his current recipe.

    • In a comment above, Cheryl mentions replacing the almond butter with coconut manna/coconut butter, and said it turned out well. I have yet to try that but definitely will. Or, peanut butter? Or even a very ripe banana. Thanks Sharon.

  7. These were great! And felt guilt free while eating!!! I had to do 1/2 of Almond butter and organic peanut butter. I had mini Enjoy Life semi-sweet chips and made the recipe to what is listed above. Plenty of sweetness for me, now hopefully there will be some left for John once he returns from work. ; )
