Once a month Katie Farina, of Katie’s Healing Kitchen, hosts a healthy brunch at her parent’s restaurant in support of a local charity. One recent Sunday she served up Sweet Potato Waffles and made devotees of us all.
And then she was generous enough to share them. If you don’t have a waffle iron, make these as pancakes.
Katie’s Sweet Potato Waffles with Cinnamon Almond Butter Caramel

Directions
- Steam sweet potato chunks (skin and all) until soft.
- Blend with milk until pureed, add coconut oil and vanilla and set aside.
- Heat up waffle iron.
