A few days ago I posted this video of an immunity care package I put together for a friend. Before you say anything, this is my love language, and this is someone who means a lot to me.
A number of people asked me for the recipe to the Immunity Broth & Puree, so I wanted to post it here, in case it is beneficial to you or someone you know.
In the video I mentioned that Ayurveda doesn’t love garlic. I wrote about that in my book, “Garlic… (is) said to lead to greed, selfishness and overindulgence when eaten in excess, or anger and irritation when eaten raw.” Also, I would add, it can of course lead to pitta imbalance, excess heat, burning sensations.
Having said that, Ayurveda does have a great formula of boiled garlic milk, Lashuna Ksheerapaka, so the medicinal benefits are well known and appreciated. “Those who take garlic as medicine do so as prevention for Vata vyadhi, especially diseases related to bone, marrow, worm infestations, digestive disorders.”
One of my teachers, an international celebrated Ayurvedic Doctor promotes garlic in certain conditions. This is one of those conditions.
So here’s the recipe. You can always skip the garlic and increase the ginger. Onion soup, by the way, is something I learned from the macrobiotic tradition. For CoVid recovery, I wanted it strong with everything that works.
GOLDEN SOUP: GINGER TURMERIC IMMUNITY BROTH
Yield: About 4 cups broth, 4 cups purée
Ingredients
1 tablespoon ghee (or olive oil)
1 piece ginger root
1 onion
4-5 cloves garlic
1 carrot
1 celery stalk
1 cup broccoli florets
1 teaspoon curry powder
1 scant teaspoon turmeric
1 stalk each rosemary, oregano, thyme, or aromatic herbs of choice
8 cups water
Salt & pepper, to taste
Broth
Melt the ghee in a soup pot over medium heat. Give the ginger, onion, garlic and vegetables a rough chop (no need to peel).
Add the ginger, onion, garlic to the pot and sauté for a few minutes. Once the onion begins to go translucent, add the vegetables, spices and herbs. Stir and sauté another minute, then pour in the water.
Cover and bring up the heat until it boils, then reduce the heat, cover and simmer for one hour, stirring occasionally. After an hour, remove from the heat. Allow to cool 5-10 minutes and strain.
Puree
If you don’t want to eat over-boiled vegetables, but don’t want to toss them, you can purée the strained vegetables with some of the broth. Just add enough broth to get the consistency you like.
It will be a very pungent purée, so remove some of the ginger, onion, garlic before blending if hot is not your preference. Fire burns toxins, but it can also burn tissue. So be judicious. Ayurveda reminds us, to each his own.
