Katie’s Sweet Potato Waffles with Almond Butter Caramel Drizzle

Once a month Katie Farina, of Katie’s Healing Kitchen, hosts a healthy brunch at her parent’s restaurant in support of a local charity. One recent Sunday she served up Sweet Potato Waffles and made devotees of us all.

And then she was generous enough to share them. If you don’t have a waffle iron, make these as pancakes.

Katie’s Sweet Potato Waffles with Cinnamon Almond Butter Caramel
Makes 4 waffles


1 1/4 cups orange sweet potato
1 1/4 cups unsweetened non-dairy milk
1 tablespoon vanilla
1/4 cup coconut oil, melted
1 1/2 cups all purpose gluten-free flour
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 cup coconut sugar
2 tablespoons chia seeds


  1. Steam sweet potato chunks (skin and all) until soft.
  2. Blend with milk until pureed, add coconut oil and vanilla and set aside.
  3. Heat up waffle iron.
  4. Combine dry ingredients in a large bowl.
  5. Combine wet and dry mix. Let dough sit for a few minutes for chia to absorb and thicken mix a little.
  6. Spray waffle iron with coconut oil. Scoop in waffle batter (about 1 cup).
  7. Cook according to waffle maker (mine usually takes 2-3 minutes)
  8. Drizzle caramel and any other desired toppings.

Cinnamon Almond Butter Caramel
Makes 1 cup


1/4 cup almond butter
1/4 cup coconut oil, melted
1/4 cup maple syrup, at room temperature
1/4 teaspoon salt
1 teaspoon cinnamon
water as needed, to blend


Blend until smooth. Drizzle over waffles. Serve with pecans.

Season: Summer, Autumn, Winter

  2. i love sweet potatoes but in my area orange potatoes are rare they are usually white coconut oil and vanilla will give them unique taste ,thanks for sharing such an amazing recipe
